What can I say, my name is Wes and I'm from Massachusetts and I love the Patriots and brewing beer. My journey with brewing, all began in college during a trip to the local target when I was a Junior in college. I was strolling down the isle and an end cap item caught my eye. Mr. Beer home brewing kit, I purchased it and ran home to crack open my first attempt at brewing beer. It was great because I was not familiar with the brewing process, however I was a seasoned cook, so following the instructions proved easy enough. I ended up fermenting the beer under my bed as I was living in a dorm style row house. The fermenting went fine but what didn't go so well was my decision to carbonate the beer in mason jars. I started hearing random pops and I couldn't figure out what the sound was until I went to open them for the first time and half of them were flat. Lesson learned, only carbonate beer in a vessel that can handle the pressure.
Soon after that I was out apple picking with my girlfriend at the time (now my wife), and the farm was selling unpasteurized apple cider. I thought to myself "I wonder how to make hard cider". So thus was my first trip to the local home brew store, Basement Brewhaus, and soon after my obsession with brewing came to fruition. And I have had to deal with some space constraints which has lead me to come up with some unique solutions and so I thought I would share my journey with others.
